     3   Q.   Have you taught environmental health -- and, in particular,
     4        we are concerned with health and safety at work -- to other
     5        people?
     6        A.  Yes, indeed.  I have lectured on health and safety
     7        quite widely and, in particular, I contributed to the
     8        ISH -- that is the Institute of Safety and Health --
     9        diploma course, run by ROSPA, for probably 15 years taking
    10        certain aspects of it.

    12   Q.   Have you delivered papers on this topic to international
    13        bodies?
    14        A.  I have.

    16   Q.   Are you a past chairman of the Environmental Health
    17        Commercial and Industrial Centre?
    18        A.  I am.

    20   Q.   Are you now a Fellow of that institute?
    21        A.  Yes.  I was made a Fellow in 1988.

    23   Q.   As briefly as you can, but without skimping the essential
    24        details, can you describe for us, please, the kind of
    25        industries that you have, during the course of your long
    26        career in environmental health, looked at as an
    27        Environmental Health person?
    28        A.  Yes, indeed.  Within industry, obviously, I spent 10
    29        years in the food manufacturing industry, looking at all
    30        aspects, and also food retailing, since Rank Hovis had many
    31        shops, too.  I then spent a period of time concentrating on
    32        the hotel and catering industry.  In my capacity as a
    33        consultant, I still work widely in the hotel and catering
    34        industry, and I am retained by some food manufacturing
    35        companies too.  But I have gained wide experience in
    36        industry generally, and I have conducted safety audits on
    37        many large national companies.

    39   Q.   When did you first come into contact with the Plaintiffs,
    40        second Plaintiffs, in this case, McDonald's Restaurants
    41        Limited?
    42        A.  The first -- and, forgive me, I am not quite sure of
    43        the date -- but I was asked in about 1986 to look at a
    44        specific task for McDonald's.

    46   Q.   Which was?
    47        A.  It was particularly to look at the cleaning of extract
    48        ventilation systems, and so on.  I did that as a one-off
    49        task.  I then became rather more involved when Jill Barnes
    50        was appointed in 1990.

    52   Q.   I am going to ask you this.  I want you to be certain that 
    53        I am not going to ask you for pounds, shillings and pence.
    54        First of all, have you remained in a relationship with
    55        McDonald's as a consultant since about 1990?
    56        A.  Yes.

    58   Q.   What percentage of your fee income is derived from your
    59        work for McDonald's over the last five years, on average?
    60        A.  Well, it does vary a little bit, because I am not paid
