Day 150 - 07 Jul 95 - Page 04

  Q. So it was the Autumn?
       A. Yes.

  Q. Of 1983.
       A. Yes.

  Q. So you had just come out of university, so you would be
       about?
       A. 21.

  Q. Which store were you a crew member at?
       A. That was the local one which was Newcastle-under-Lyne
       in Staffordshire.

  Q. What sort of store was that? When I say that, I mean, was
it located in the centre of the town?
       A. Yes, it was in the middle of the town centre. I think
it had been opened a few years and was relatively quiet
compared to my understanding of restaurants now.

  Q. What level, generally speaking, roughly speaking, what
level of custom, given what you know now about other
stores, was that store getting? Was it a busy store or a
       quiet one?
       A. No, it was, as I mentioned, with hindsight, a
particularly sort of quiet one. Saturdays notwithstanding,
but for the majority of the week it was a quieter
       restaurant.

  Q. Did you remain as a crew member?
       A. I stayed as a crew member for about three months and
then I decided to become a salaried Manager. I became a
Trainee Manager in about December that year.

  Q. So were you a crew member for a few months?
       A. About two or three months, that is right.

  Q. When you were a crew member for those few months, what sort
of hours were you working? What days did you work for
       example generally?
       A. Basically, I was available to work any days at any
particular shifts. I was what we call fully flexible, so
I was a full-time employee, so that meant I could come in
first thing in the morning or I could work the evening or
night shift. I was available to work at any time.

  Q. I know it is sometime ago now, but have you any rough idea
as to how many hours you would have been working generally
       per week?
       A. They were not -- 40 hours a week, perhaps, 39, 40
hours; it was not too excessive.

  Q. Were there occasions on which you worked more than, say, 45
       hours?
       A. Not that I could really recall, to be honest.

  Q. Did you work as a crew member in all the different areas of
       the store ---
       A. Yes. I worked in the kitchen, the counter, the dining
area. I have worked in all the areas that everyone else
