I hate to go against a fellow Aussie, but then again, you are from the city and I am from the country. The way I got it is that in australia (or the individual state), McD finds companies to supply the food, and this is all sent to a warehouse os storage or whateva so that the whole state gets the same stuff and if there is an outbreak of some sort, it is easier to track where it occured. The companies that McD get this off have contracts, but they do not "only" have to supply to maccas, they can have contracts with other ppl. This is one of australias 'trade practising acts' or something like that. The company that supplies us with the top of the hotcake containers is local, and they have contracts with lots of other local businesses
