In 1970 G.D. Searle applied for FDA approval of aspartame. Over the next few yars it submitted about 90 tests, an unusually high number, in support of its petition. These tests indicated that aspartame could be consumed safely in amunts far exceeding any likely human use. Why so many tests? Because the master-minds behind the new artificial sweetner knew that sacchrine and cylcalmate went through hell - literally. More importantly they knew that they had a safe product, one superior to the existing artificial sweetner-sacchrine. Since then Nutrasweet has endeavored over 200 tests, It one of the most thourougly tested products of all time.

Does Nutrasweet cause cancer?
No test ever conducted points to a link with cancer from consuming any amount of aspartame. Aspartame is a synthetic compund of two amino acids, which are constituents of normal dietary protein. When consumed, aspartame breaks down into phenylalanine, aspartic acid, and methanol. Phenylalaline and aspartic acid are constituents of meat, fish, and grains. Mehtanol can be poisonous in high doses, by some vegetables and fruit juices contain higher amounts of methanol than does aspartame.

I've never heard anyone complain that cooking with aspartame reduces its potency, but it may be possible. I have never cooked with aspartame or know anyone who has. Aspartame is nearly 200 times stronger than sugar, so I would be skeptical of your inquiry.
