19 MR. RAMPTON: No. I had not gone up. I had gone down. I had
20 gone to "prep table" and "flat", and I was going to go
21 upwards. Between the clam shells and the vat chicken
22 fillet stations, shelf and the two fry racks, do you see,
23 there are some rings which are pots, I think you have told
24 us; is that right?
25 A. Yes.

27 Q. They contain things like salad and pickles and all that
28 kind of stuff?
29 A. Yes.

31 Q. Then on the bottom side next to doughnut sawing rack, we
32 see a whole lot of bun racks; is that right?

38 The only thing I would like you to suggest to us -- for
39 this purpose, my Lord, perhaps the witness might be allowed
40 to mark that copy, and then we will replace it in the
41 witness bundle with a red pen -- to tell us where in the
42 whole of this area, if anywhere, one finds waste bins.

46 Miss Moffatt, before you start marking, can I ask you, is
47 there any only one kind of waste bin or are there more than
48 one kind of waste bin?
49 A. Oh, well, you have got your food waste and paper waste.

52 A. Red.

54 Q. What is supposed to go into the red food waste bin?
55 A. Just any food that obviously cannot be served, so
56 anything that is waste; anything that is not suitable to be
57 served to the customer, basically, gets put in there.
