     2   Q.   What is the grey one?
     3        A.  That is for paper and plastic rubbish.

     5   MS. STEEL:  Can I just say something?  I do not know whether
     6        this matters, but the point where I intervened about the
     7        circles, the witness did not actually say what the bit was
     8        beneath the clams -- I really do not know whether it
     9        matters or not -- the bit that says "prep table", and she
    10        was clearly talking about the ones above the clams, and
    11        I do not know whether that matters or not.

    13   MR. RAMPTON:  I will come back to the bins in a moment, if
    14        somebody reminds me.  You may have said it before,
    15        Miss Moffatt, but never mind, what is the prep table for?
    16        A.  To my knowledge, because I have not been in the store
    17        for quite a long time, I think it is -- there is a grill
    18        the other side as well, and they are flat grills rather
    19        than the new clam shell grill.

    22        A.  Obviously, I have not been -----

    24   Q.   No, that is all right.  The grey bins are for paper waste,
    25        packaging, plastic, that kind of thing ---
    26        A.  Yes.

    29        A.  No.

    31   Q.   What happens to the contents of the grey bin at the end of
    32        the day?
    33        A.  Put into the larger -- there is a large bin that has a
    34        lid on it in the kitchens; it is put into there and then
    35        transferred to be compacted.

    37   Q.   What about the food waste in the red bins?
    38        A.  Well, basically, someone like a training squad person
    39        would track the waste, so they would put down on the list
    40        what they had wasted for that day.

    42   Q.   How often in a day would that happen?
    43        A.  Every two hours.

    45   Q.   Every two hours.  The important thing, if you would not
    46        mind -- again, from memory; nobody is expecting any high
    47        degree of accuracy -- with that marker just putting some
    48        blobs or crosses, whatever you like, on the plan you have
    49        got there where one would expect to find red bins on a
    50        normal day.  Just before we pass that round -----

    57        not asking you to mark the grey bins because they are not
    58        important for this purpose.  At the bottom of the page
    59        there are some rooms.  In between the store and the public
    60        loos, there is something marked "crew/training".  Do you
