6 Q. The first comment was, "A number of excessive entries for
7 adjustment audit reports but all are signed", is that
8 something you look at in an adjustment report -----
9 A. Yes, yes, I check that.

12 A. Yes, they must be signed.

14 Q. Then there is a remark about somebody who worked a close
15 although still under 18 years. Then No. 3: "Nine breaks
16 not taken/too short out of 10 days checked". What system
17 do you use, or have you used, when you have done these
18 audits to see that the right number and the right length of
19 breaks are taken?
20 A. What I usually do is take -- probably take 10 employees
21 and then go through the schedule, the clocking in and out
22 reports, and just check. I would check it against them, so
23 I would take 10 employees ------

25 Q. So, is it a random sample?
26 A. Oh, yes, yes, just pick them out of the filing cabinet,
27 their files, because I use them later on as well. So you
28 take 10 employees and check, you know, their clocking in
29 and out, their breaks taken.

32 A. A month.

35 whole month?

51 MR. JUSTICE BELL: Would there be a way you choose the 10? I
52 mean, would you make sure that three or four of them were
53 under 18, or anything like that?
54 A. The first thing you do, I would pick out 10 files
55 randomly, but then you make sure you have, say, two new
56 starters, three full-timers, three part-timers and,
57 perhaps, someone on the dining area, so that is obviously
58 different to a crew member. So you just try to get a cover
59 of all the store.
