DAY 212
PAUL LEMAIRE, Examined:
and see if the map, the floor plan of the Heathrow
restaurant is there; can you try and find the one that Miss
Moffatt marked for us this morning? It should be one with
some -----

MS. STEEL: Sorry, should the witness not have a new one which
is not marked?

MR. RAMPTON: Yes, I was only trying to save time. Is there a
blank one there?
A. Yes, there is.

Q. Do not bother marking it but can you open it up? Can you
tell us, please, where, if anywhere, on that plan one can
ordinarily expect during a working day to find red waste
bins for discarded food? It is not marked; I am asking you
to tell us.
A. By the transfer bin, the production with wrap and call.

Q. By the?
A. C1.

Q. I am not sure -- C1, did you say?
A. Yes.

Q. Wrap and call, yes?
A. Yes, there are one or two places there, opposite where
the fry station is on the right-hand side. There is a
little black dot, I think.

Q. Yes.
A. It would have been put there for fries.

MR. JUSTICE BELL: Just pause a moment.

MR. RAMPTON: Fry station -- I am not sure if I can see a black
dot.
A. Just above the tills, where the tills are.

Q. I see. There is one up there, underneath "presenter"?
A. Yes, next to the fry station there would be a red bin
put there for fries.

Q. Yes. Anywhere else?
A. Occasionally they would be put around the kitchen,
dressing tables and buns.

Q. Are they used in the course of an ordinary day's work?
A. Yes, they are.

Q. As a Floor Manager -- you were then a trainee; now, of
course, you are a Second Assistant -- but when you were a
Floor Manager did you ever have to count the waste in the
bins?
A. Yes, I did.

Q. How often did you do that during the course of a day?
A. Twice a shift or 3 times my shift.

Q. I think there is only one other thing I need to ask you
