     3        A.  One.

     5   Q.   One.  That is "Lemaire", all one word?
     6        A.  That is right.

     8   Q.   You remember Mr. Beech originally made an allegation that
     9        the pickle jars were kept out of the fridge too long and
    10        then were topped up with new pickles.  He has now, as you
    11        probably have realised, withdrawn that allegation.

    13   MS. STEEL:   Actually, what he withdrew was about the two hour
    14        time limit.

    16   MR. RAMPTON:  He makes a similar allegation, I think, about
    17        salad.  It is not entirely clear what it is that he is
    18        saying because we only have Mr. Morris' note of it.  Are
    19        you conscious of any practice of filling up lettuce bags
    20        which have got old lettuce in them with new lettuce?
    21        A.  Well, I have done salads and I have trained to do
    22        salads.  You just use whatever you have got in the tub
    23        first and then top it up again and spread it out, top it
    24        up; you do not put old on top of new because the old stuff
    25        lowest is not going to be used -----

    27   Q.   Sorry, I did not hear that.
    28        A.  Old lettuce is not going to be used.  You should put
    29        new on top, so empty it out first.

    31   Q.   What happens if, at the end of the shift -- I know not at
    32        the end of the day -- the tub, or whatever it is, has some
    33        old lettuce which has not been used in it, what happens to
    34        that lettuce?
    35        A.  It is discarded in the red bin and recorded as waste.

    37   Q.   I think finally this, actually:  When you started as a
    38        part-timer -- you are now aged 21, you will be 22 in March,
    39        I think, will you not?
    40        A.  That is correct.

    42   Q.   You started as a part-timer at college in July '91 you were
    43        under 18?
    44        A.  That is correct.

    47        some questions tomorrow, Mr. Lemaire.
