DAY 212
PAUL LEMAIRE, Examined:
about, Mr. Lemaire -- do we spell your name as two words or
as one?
A. One.

Q. One. That is "Lemaire", all one word?
A. That is right.

Q. You remember Mr. Beech originally made an allegation that
the pickle jars were kept out of the fridge too long and
then were topped up with new pickles. He has now, as you
probably have realised, withdrawn that allegation.

MS. STEEL: Actually, what he withdrew was about the two hour
time limit.

MR. RAMPTON: He makes a similar allegation, I think, about
salad. It is not entirely clear what it is that he is
saying because we only have Mr. Morris' note of it. Are
you conscious of any practice of filling up lettuce bags
which have got old lettuce in them with new lettuce?
A. Well, I have done salads and I have trained to do
salads. You just use whatever you have got in the tub
first and then top it up again and spread it out, top it
up; you do not put old on top of new because the old stuff
lowest is not going to be used -----

Q. Sorry, I did not hear that.
A. Old lettuce is not going to be used. You should put
new on top, so empty it out first.

Q. What happens if, at the end of the shift -- I know not at
the end of the day -- the tub, or whatever it is, has some
old lettuce which has not been used in it, what happens to
that lettuce?
A. It is discarded in the red bin and recorded as waste.

Q. I think finally this, actually: When you started as a
part-timer -- you are now aged 21, you will be 22 in March,
I think, will you not?
A. That is correct.

Q. You started as a part-timer at college in July '91 you were
under 18?
A. That is correct.

Q. 17. Thank you. I dare say the Defendants will ask you
some questions tomorrow, Mr. Lemaire.

MR. JUSTICE BELL: Yes. If there are any questions you want to
ask tonight, we can go on for another ten minutes,
Ms. Steel or Mr. Morris, or we can break off now at your
choice.

MR. MORRIS: We prefer to break off, if it is possible.

MR. JUSTICE BELL: Yes. (To the witness): Thank you. Do not
talk to anyone about your evidence overnight and do not
talk to Miss Moffatt about hers, please. 10.30 in the
morning.
(The Court adjourned until the following day at 10.30 a.m.)
