                                                                  DAY 213

                                            PAUL LEMAIRE, Cross-examined:

1 A. Not off the top of my head, no.
     2
3 Q. What are the busy lunchtime hours on a Saturday?
4 A. 12.00 to 2.00; occasionally it might stretch to
     5 3 o'clock as well.
     6
7 Q. How many people would be responsible for the .....
     8 (Pause)
     9
10 MR. MORRIS: How many people would tend to be assigned to the
11 back room or working in the back room at any one time?
    12 A. One person.
    13
14 Q. Would that increase on a busy Saturday period, or was
    15 that -----
16 A. That would just stay one person in that back room; no
17 matter what the volume was, there would be someone in
    18 there.
    19
20 Q. On the map we have got of the store, that is the one that
21 is called "wash up", is it -- just to see if we were
22 talking about the same thing?
    23
24 MS. STEEL: Beneath the bun racks, about ------
    25
26 MR. MORRIS: In the middle of the -----
27 A. That is right, yes.
    28
29 MS. STEEL: While you have got the map out, how many people
30 would be working on each station in the kitchen? Can you
    31 just go through that?
    32 A. What day?
    33
    34 Q. On a Saturday lunchtime.
    35
36 MR. JUSTICE BELL: We are still on the Saturday busy period.
37 A. OK. You would have one person doing chicken sandwiches
38 and nuggets; one person doing fillet and pies; one person
    39 doing quarters -----
    40
41 MR. MORRIS: That is quarterpounders?
    42 A. Quarterpounders -- sorry.
    43
44 MS. STEEL: And they would just do them?
45 A. They will just do them, yes. Two or three people on
46 regular grill doing hamburgers and Big Macs; and you have a
    47 back room person.
    48
49 MR. JUSTICE BELL: You have mentioned a back room person.
    50
51 MS. STEEL: What about fries?
52 A. There would be one person on the fries -- sorry.
    53
54 Q. The people on the regular grill and hamburgers, would they
55 also be responsible for dressing the burgers?
56 A. One person would be doing the buns, one person would be
57 doing the dressing, and one person would be doing the
    58 grill.
    59
60 MR. JUSTICE BELL: What are you up to now; about 19? (Pause)

                                      15
