     2        A.  No.  The ones I have mentioned I have done in the
     3        restaurant.

     5   MR. MORRIS:  Those are the four -- I suppose three areas; there
     6        is the money, the management of money, scheduling, and
     7        cleanliness.  Would you say those were the three areas, awe
     8        apart from crew levels, that you monitored?
     9        A.  I would monitor the overall view of the restaurant
    10        working with the full shift in there, the operations of the
    11        restaurant, if the store is running smoothly.

    13   Q.   Is there anything else that you would consider important to
    14        check out when you have a problem in the store with
    15        management that are being dishonest to you, and things like
    16        that?
    17        A.  There are tools that I would do.  I mean, there is rap
    18        sessions, which I would do in my stores, which I have done
    19        at Heathrow.

    21   MR. JUSTICE BELL:  As I understand it, it is all very well doing
    22        all these things, but there was one big obvious problem
    23        when you got there:  there was only about two-thirds of the
    24        staff there needed to be?
    25        A.  There was an issue with the staffing level and the
    26        management level; that is correct.

    28   MR. MORRIS:  The staff that were there would have to be working
    29        extra hard to make up for that shortfall, obviously, by
    30        definition; yes?
    31        A.  Sorry?

    33   Q.   The same amount of customers might be coming in, but the
    34        same staff would have to be working extra hard?
    35        A.  That is correct, but at the same time you could be
    36        losing customers because, you know, they are having to
    37        wait.

    39   Q.   You said it was a high volume store?
    40        A.  It is.

    42   MR. JUSTICE BELL:  Is this fair, that you thought it needed 160
    43        crew plus Floor Managers and salaried Managers?
    44        A.  That is correct.

    46   Q.   As I understand what you are saying, that was to run the
    47        store efficiently ---
    48        A.  That is correct.

    50   Q.   -- and deal with the extra trade which efficient running 
    51        should bring and keep? 
    52        A.  That is correct.

    54   Q.   However that may be, there were not enough staff even to
    55        run the amount of trade which was coming through at the
    56        time properly?
    57        A.  The store was short staffed.
