     7        topic, and it is this:  is the mere number of heads in the
     8        store on any one day the sole guide or the sole criteria
     9        for efficiency, or are there other things which matter in
    10        producing a good service for the customer?
    11        A.  Having the correct level of staff, level of Managers,
    12        and making sure that the restaurant is a safe environment,
    13        restaurant safety and food safety; all of these matter in
    14        the proper operation of a restaurant.

    16   Q.   I ask you a further question, which is probably obvious and
    17        answers itself.  If you have got good Managers in a
    18        restaurant, can they do well with fewer staff than somebody
    19        who is not such a good Manager, or does it not actually
    20        affect that restaurant?

    24        a poor Manager?  I suppose it is obvious.
