     5        A.  Yes, that is correct.

    25   MR. RAMPTON:  Going back to Mr. Beech's second statement,
    26        please, Mr. Roberts.  Forget about the training, forget
    27        about the crew.  I want to ask you about the salads.
    28        Roughly speaking, in the course of a day at Heathrow, how
    29        many bags of salads would you use?
    30        A.  Salad mix could be up to six or seven bags.

    32   Q.   How big are the bags?
    33        A.  Two kilos.

    35   Q.   Sometimes, I suppose, at the close of business -- which was
    36        11 o'clock in those days, was it?
    37        A.  One o'clock.

    39   Q.   -- there would be a bag with some salad left in it?
    40        A.  When they actually made up the salads, they came in
    41        like a polythene bag, and that would be transferred into a
    42        bowl, the correct amount, what you needed for how many you
    43        were going to make.  So you may use half the bag, but the
    44        bag would be just left in the cooler; it would not be taken
    45        out.  They would pour it into the actual mixing bowl.

    47   Q.   So a bag which is kept in the cooler during the course of a
    48        day's work, is it left there overnight as well?
    49        A.  It may be, yes.

    51   Q.   How long can you go on using a bag of lettuce? 
    52        A.  It has a shelf life stamped on to it; it is the shelf 
    53        life that is stamped on to it.

    55   Q.   So long as it is kept in the cooler, that is all right?
    56        A.  Yes.

    59        A.  Yes, that is correct.
