     4        A.  Any day.

     7        A.  Yes.

     9   Q.   There was not kind of a general pattern with that, then, to
    10        start with?
    11        A.  What, my days off?

    14        A.  Not really, no.

    16   Q.   When did you change from working usually 8 till 5?
    17        A.  I do not really know.  It would have been -----

    20        A.  Probably, maybe, towards the end of the summer.

    22   Q.   You said it was for a couple of months after you started
    23        that you were doing that?
    24        A.  What, the 8 to 5?

    26   Q.   Yes.
    27        A.  Yes.  I mean, some days I might stay, but most of the
    28        time, as an average, I would say 8, 5, yes.

    30   Q.   The red food waste bins in the kitchen, there were four of
    31        them, you said, I think?
    32        A.  Four or five.  In the fillet and pie and chicken
    33        station, there was one either end most of the time; there
    34        was definitely one, sometimes two; one for the quarter
    35        grill, one for the regular grill and one for wrap and call;
    36        plus there were about five or six in the front as well.

    38   Q.   What, do you mean by the front counter?
    39        A.  Yes, for the till people and drive-thru.

    41   MR. JUSTICE BELL:   What are they required for?
    42        A.  On the front, the sandwiches that we have that we pass
    43        through from the kitchen to the front, you would have one
    44        bin there; if the time is up on it, 10 minutes, we can put
    45        it into one bin, and you can record just for that one
    46        person how much they are wasting, whether you have a
    47        problem with that; things like the doughnuts, if they fall
    48        -- things fall on the floor, if people drop an order, you
    49        know, it slips out of their hands, we put it straight into
    50        the red bin and replace the order; just, basically, 
    51        anything that happens on the front.  You have a red and a 
    52        grey bin:  the grey for just normal rubbish and the red for 
    53        any food.

    55   MS. STEEL:  The big bin, that is by the wrap and call, is it
    56        not, that everything is counted into?
    57        A.  Yes-- well, to the side of it, yes.

    59   Q.   So the bins had to be taken over there to be counted; would
    60        you agree with that?
