     2   Q.   That was the busy time; yes?
     3        A.  The busier, yes; not busy, but busier.

     5   Q.   How many would you have in the less busy times?
     6        A.  It all depends.  I mean, the way we work it out or the
     7        way it is on how many customers we are serving per hour,
     8        and that can vary.

    10   Q.   How is it worked out then?
    11        A.  The way how many people we schedule?

    13   Q.   Yes.
    14        A.  If it is based on all the crew are productive, we work
    15        out, I mean, it is down to the individual.  I would decide
    16        myself, if I am serving, say, 100 customers, I would look
    17        at how many till people I would need to serve them, how
    18        many people I would need on maybe cooking the Big Macs and
    19        hamburgers, how many -- if I need somebody on fries.

    21   Q.   Are you saying 100 per hour or something?
    22        A.  Well, whether it is 100 or 200 or however many.

    24   Q.   Yes, you gave a figure of 100; was that per hour?
    25        A.  Yes.

    27   Q.   Right.  If you had 100 customers coming through per hour,
    28        how many people would you have on the tills?
    29        A.  On till, you would probably have three.

    31   Q.   How many would you have in the kitchen?
    32        A.  Maybe four, three or four, plus a person wrapping the
    33        food and then you have the drive-thru as well.

    35   Q.   100 an hour, that is quite quiet, is it not?
    36        A.  Average.

    39        A.  Yes.

    41   Q.   What would be the busiest that it got usually?
    42        A.  On a Saturday you would be -- it would probably go to
    43        about 230 customers.

    45   MR. JUSTICE BELL:  That is in the middle of the day, is it?
    46        A.  Yes, 230 to 250.  That would be sort of lunchtime.

    49        A.  Early afternoon.

    51   Q.   Then you would have five in the kitchen and how many on the 
    52        tills? 
    53        A.  Probably five or six till people, one on the fry
    54        station, you would have people in the dining area, and then
    55        in the drive-thru as well, because when I was there we had
    56        a third window put on the extension of the building so we
    57        needed another person to be working in there so we had an
    58        extra person.
