     1        a witness who is making criticisms of McDonald's in one way
     2        or another, it might be relevant to see whether they are
     3        also prepared to say good things about them as well.

     5        In any event, there is a great danger that if there is too
     6        much editing, things run out of context.  So I suggest you
     7        read the lot out, and you can sort out what you want out of
     8        the statement as part of your case later.

    10   MR. MORRIS:  Right.  This is an interview with Mark Ryan, Second
    11        Assistant Manager at Holborn, March 30th, 1987.  The
    12        interview was done by Harriet Lamb, our forthcoming
    13        witness, and it is based upon the notes of her interview.
    14        That is my understanding, and that is what I informed the
    15        Plaintiffs on 21st November last year.

    17        "The restaurant opened on December 22nd.  For the opening,
    18        two managers were brought in from outside London, but from
    19        within McDonald's.  He came from Camberley.  He did not
    20        want" -- "he" there, I presume, is Mark Ryan -- "he did not
    21        wan to come to London over Christmas, but it was made clear
    22        that if he wanted a career in McDonald's he should.
    23        Returns to Camberley next week.  The company wanted
    24        managers with 'strong shock control', because of the number
    25        of employees in each restaurant and the stress of West End
    26        stores.

    28        "For the opening, took on a lot of foreign students, a lot
    29        of Italians who are 'just here to learn English'.  Could
    30        not predict the volume, so needed a lot, but some were just
    31        hanging around with nothing to do and know requirements
    32        now, so got rid of the foreigners."  I think"know" is
    33        K-N-O-W.  "....they know the requirements now, so got rid
    34        of foreigners. 'We don't need the Italians so much now.'

    36        "Settled down to 120 crew and 8 managers.  Are probably
    37        about 35 full-timers, i.e. those who work 6 to 8 hours in
    38        the daytime.  But we do not have full and part-timers
    39        here.  Everyone at McDonald's works flexible hours.  In
    40        suburban areas, have crew on full-time jobs, there open 8
    41        till close.  At Holborn, because do breakfasts, are
    42        effectively staff on duty around the clock.  3 people work
    43        8 hours through the night, cleaning to get the place ready
    44        for the morning.  There are 5 of them who work out their
    45        own schedule.  Otherwise can work roughly between 6.30 to
    46        2.00, 7.00" -- I think that is 7.00 until 12.00, I am not
    47        sure; it might be 1800 hours, but it is hard to tell,
    48        really.

    50        "Managers draw the rotas up on Thursday for the next 
    51        week.  No one has a set time, 'we schedule for our needs 
    52        not theirs'.

    54        "Shifts are between 4 to 8 hours.  Can work overtime at the
    55        hourly rate - usually those who work overtime are those
    56        trying to progress.  Sometimes ask others to stay on or to
    57        come in off their shifts if are short, because staff have
    58        gone sick, etc.  In London can bring in people from nearby
    59        stores, people would usually stay.
