5 there were sterilizers for the hide puller chains and
6 pithing rod. This was not the case while I worked at
7 Jarrets. There was no sterilizing for the pithing rod, to
8 start with.

11 A. On page number 6, still the same paragraph, number 8.

14 A. Mr. Bone says that the previous plan is not including
15 every single sterilizer.

17 Q. I understand that. What I am most concerned with -- I do
18 not want to lead you off your course -- if you say there
19 was not a sterilizer where Mr. Bone's statement says there
20 was, I would like you to draw my attention to that.
21 A. Right, yes. These are particularly two points -- there
22 was no sterilizer for the hide puller chains, for the
23 pithing rod.

26 A. Yes -- or the pithing rod.

32 A. The pithing rod was kept -- between use, the pithing
33 rod was kept stuck between water pipes on the wall, next to
34 the man who did the pithing. I brought this to
35 Mr. Bone's -----

41 Q. No, I am sorry. I do not want to get cross with you, but
42 it is hopeless if you keep going and I am still making a
43 note. I am afraid it can be very boring, but I want to get
44 it down. (Pause) Yes.
45 A. As far as the sterilizer for the hide puller chains is
46 concerned, there was no such sterilizer, or, if there was
47 one or had been one inside the hide room, it was not in use
48 at the time I was there. This had been brought to the
49 attention of the Jarrets at least on two occasions by the
50 Ministry of Agriculture inspectors, and this was considered
51 by them as one of the serious points that might fail
52 Jarrets at the next EC inspection. At this point, there is
53 a serious risk for course contamination.

55 The next paragraph would be paragraph number 9, where
56 Mr. Bone talks about the separation between dirty and the
57 clean side of the abattoir, which is one of the ground
58 principles of abattoir hygiene. I mentioned in my evidence
59 last time that the men had to enter the abattoir building
60 from outside. Their changing rooms were situated in a
