     1        from the chill rooms, No. 2, No. 6 and No. 5.  We are now
     2        talking of cattle carcasses only.

     5        A.  Some of the carcasses from this room, once they had
     6        entered this room from the other chillers, they went into
     7        the  .....

     9   MR. MORRIS:  When you say "this room" you have to say which
    10        one.
    11        A.  Chiller room No. 1, chill room 1.  Some of the
    12        carcasses went to the despatch bay to be loaded as whole
    13        carcasses for export.  Some of the carcasses went to chill
    14        room No. 2 for further chilling, to be then cut or boned
    15        later, and some of the carcasses went straight into the
    16        cutting room.

    18   Q.   He calls it the "boning room", that is the same thing?
    19        A.  Or boning room, yes, that is the same.  Cutting room
    20        and boning room, that is the same thing.  There was a
    21        further twist to the tale, in that on days when we were
    22        loading for export to France fore quarters of cow, those
    23        days the French often preferred the fore quarters and did
    24        not buy the hind quarters at all.  Those hind quarters
    25        would then go directly from despatch bay where the carcass
    26        was split into hind quarter and fore quarter.  The hind
    27        quarter would then enter the cutting room from the despatch
    28        bay.  This was, as far as I am concerned, during the time I
    29        was working at Jarrets, this was the movement of carcasses
    30        at the abattoir.

    32   Q.   The despatch bay is, yes, at the bottom of the map under
    33        the "cutting room"?
    34        A.  Yes.

    36   MR. JUSTICE BELL:  But how did they go to the despatch bay?
    37        They went as whole carcasses and were cut there?
    38        A.  Yes, that is right.  They were cut where there is a man
    39        with a sterilizer in front him saying "breaking saw" in the
    40        corridor.

    43        A.  Between chill room No. 1 and chill room No. 4.  There
    44        is a corridor and there is a man there ---

    51        A.  At the time I saw this happening it was the hind
