                                                                  DAY 217

                                                     MRS. HOVI, Examined:

look over the two new plans, Mrs. Hovi?
       A. Yes.

  Q. How long do you think it will take you to look over, just
check through the two new plans again to see if there are
any differences between them and what you recall in April
       1994?
       A. So you do not find it helpful, me going through the
       statement?

  Q. I do, but I want you to carry on with that when you come
back, but I do not want to have a break now and then
another break for you to look at the plan in half an hour
       or whenever it is time?
       A. Yes.

  Q. Do you understand?
       A. Yes.

MR. MORRIS: Is it possible for Mrs. Hovi to be able to mark the
map in any way in the witness box?

MR. JUSTICE BELL: No, I do not think you should mark the map.
If you have a piece of paper, just make a note on the back
of one of the sheets of Mr. Bone's statement that you have
turned over and I will come back at 12 o'clock. Then you
can tell me if there are any discrepancies.

                      (Short adjournment)

MR. JUSTICE BELL: Have you found any other -----
       A. Yes, there were a few minor things that I do not think
are much of significance that are different from what the
situation was. Do you want me to go ------

  Q. I only want to know them if you think they may affect food
       hygiene in any way.
       A. Well, they are -- they would be of consideration for me
and they were, some of them, there were three different
       points and ------

  Q. Why do you not tell me what they are?
       A. The weighing and grading of the carcasses has not been
marked down which is, obviously, of importance both from
meat hygiene and the abattoir's point of view as well. The
grading and weighing of the carcasses would happen in the
       fat trimming room.

MR. MORRIS: The fat trimming room?
       A. Yes, it would happen where ------

  Q. That is the end of the line before the chillers?
       A. Yes, just at the end of the line before the chillers.

MR. JUSTICE BELL: Yes, but -----
       A. From a meat hygiene point of view, this is of
importance only because at Jarrets the practice was not to
remove the ear of the animal where the ear tag was until at
this point which meant that there was a piece of
contaminated outer side of the animal, if you like,
