3 This had also been discussed with them, the Ministry of
4 Agriculture Inspectors, but no solution has been found as
5 yet for the identification of the carcasses. I admit that
6 it is a problem everywhere in the world where animals are
7 slaughtered and have to be identified.

9 The second point that is missing on this map is in the
10 cutting room, or actually in the boxing room within the
11 cutting room area. There is a room called "boxing" just
12 below the box store.

14 MR. MORRIS: It is a small room in the top right-hand corner of
15 the cutting room?
16 A. Next to the box store. This is where the famous mince
17 machine was situated and, just from the point of view that
18 it was mentioned in my previous statement, the fact that
19 the mince machine was not cleaned after use and it was of
20 great concern to me at the time.

22 Q. So the mince machine was kept in the boxing room?
23 A. That is right. It is really part -----

25 Q. Was it used there or was it wheeled out or what?
26 A. I understand it was -- it is an enormous machine. It
27 is a very heavy machine, it is not usually moved very
28 easily. But this boxing room is not the actual packaging
29 room, so it was more or less part of the cutting room so it
30 would be acceptable to make the mince in this room. The
31 only problem with the mince machine was that it was not
32 cleaned after use.

34 Then there is a further point within the cutting room
35 itself where you see two tables parallel to each other and
36 between the words "film wrapped".

38 Q. Yes?
39 A. The film wrapped was there but it was basically, in
40 reality, it was where between the two men that are now
41 situated next to, on both sides of it, and the film wrap
42 area was an extended boning and cutting area that had been
43 installed fairly recently, I understood, for the cutting
44 room to be able to cope with the amount of cutting they had
45 to do.

47 Q. But are you making any criticism of that?
48 A. Yes, I would have come to this point anyway later on in
49 Mr. Bone's statement, because he said that there was no
50 problem with crowding in the cutting room. There was --
51 this problem was recognised by Jarrets themselves and they
52 had already -- there was a planning permission already in
53 for a new boning and cutting room. They were quite, they
54 quite willingly admitted that there was a ground -- that
55 the boning room was too crowded.

57 MR. MORRIS: What is the film wrap?
58 A. Film wrap is vacuum packing meat.

60 Q. You say that was, effectively, taken over by more cutting
