DAY 217
MRS. HOVI, Examined:
acceptable in this plant.

Q. When you say "acceptable", what does that mean? 36 an hour
or 37 an hour, is that -----
A. As far as I can understand, they meant ------

Q. When you say "acceptable", is that the maximum or is
that ------
A. That would be the maximum, yes. But if you look at the
records in the appendices closer, you can see that the line
speed, the actual line speed, during the working day was
often faster than that.

MR. JUSTICE BELL: Yes, just pause a minute.

MR. MORRIS: Can you find the document?

MR. JUSTICE BELL: Pause a moment, we will come to that in a
moment. Yes, Mr. Morris would like you to refer to the
documents.

THE WITNESS: That is the appendix ---

MR. MORRIS: Just one example or something?
A. -- to Mr. Bone's statement. There is an appendix
number ------

Q. Appendix number?
A. No. 6. I find it very difficult to understand what
these documents actually are because they are, obviously,
something that have been -- forms that are meant for some
other use, have been used to calculate the daily through
put of the animals.

MR. JUSTICE BELL: Which pages are you looking at?
A. I am looking at page, the first page of the appendix
No. 6.

Q. What, quality assurance cleaning?
A. No. It only says LDD at the top.

MR. MORRIS: Yes. You may have the wrong appendix, I think.
A. Appendix number 6.

MR. JUSTICE BELL: Sorry, I was looking in the wrong part.

THE WITNESS: The first page there, obviously, wrong forms have
been used or forms that have been signed for in one for
another purpose have been used just to write down the daily
through put, divided into hours.

MR. JUSTICE BELL: Yes. But where do you get your figures from
which were above 35 an hour?
A. Well, if you look at the times when -- these are
obviously times when the carcasses have passed the scales,
because this is the scales man's form. On page 2, for
example -- now I can see one right away there -- on
page 2: 8.30, 9.30, 45; 10.00 to 11.00, 45; 7.00 to 7.30,
23. This, in my recollection, is more like the line speed
that was -- the line speed usually was well above 35; and
