12 Cross-examined by MR. RAMPTON Q.C.

14 MR. RAMPTON: Miss Hovi, do you remember when you were last
15 here, which was in March of this year (sic), you said
16 this: "The line speed at Jarrets when I was working there,
17 they were anything from 45 to 55 an hour. The recommended
18 line speed by the Ministry of Agriculture inspectors for
19 that particular outfit was 40 per hour"; do you remember
20 saying that?
21 A. No, I do not.

23 Q. Would you accept that you did say it?
24 A. Yes, I might have said, yes.

26 Q. It was wrong in both respects, was it not?
27 A. Well, as I said earlier, the line speeds would often
28 average up to 45 to 55 animals an hour, because the figures
29 we saw earlier before lunch, they were just indicative
30 figures of the amount of animals that had passed within
31 that hour by the scales; and, as I said, I often had to
32 regulate the line speed by preventing the man from stunning
33 because, otherwise, the line speeds would have been even
34 faster.

36 Q. Would you like to look at those tables again? Can I ask
37 you this as a preliminary question: do you doubt the
38 integrity of the documents which have been supplied to us
39 by Jarrets; do you doubt their honesty?
40 A. No, not necessarily. I am just discussing, as the
41 judge was this morning, about some of the things, and
42 I find it very difficult to understand why those documents
43 were not shown to -- why some of the documents were not
44 shown to me at the time I was working there.

46 Q. That is as maybe. Can you answer my question directly,
47 please? You say you do not necessarily doubt the integrity
48 or the authenticity of the documents. What does the word
49 "necessarily" mean?
50 A. Well, I mean that I measured carcass temperatures there
51 over a period of three weeks, and the temperatures
52 I measured were very different from the ones that they had
53 recorded; and I find it very difficult to explain it away
54 by saying that they were carcasses that came from different
55 sources; and that point I obviously had to believe what
56 I saw myself.

58 Q. We might come to that in a moment. We have got the
59 originals here, because his Lordship asked us to bring them
