                                                                  DAY 217

     1 A. The cow's.
     2
3 Q. I thought that must be so. Can you, just so that we are
4 clear about this, move over to the gut removal table in the
5 middle of the page; can you see that?
     6 A. I had not finished with the .....
     7
8 Q. I know you have not; I am not going to stop you at all. I
9 am content for you to continue but you see the gut removal
    10 table?
    11 A. Yes.
    12
13 Q. Somebody has written "head wash" there. That is why
14 I raised it. Do you agree that it must mean hand wash?
15 A. Yes, it is a hand wash.
    16
17 Q. Continue with your criticism of the accessibility of the
18 sterilization and washing points, please.
19 A. The next point where I would say that there was a
20 problem was the hiding area, the men who do the hiding.
21 They use knives to facilitate, to help the hide puller in
22 case the hide puller starts removing the carcass fat, which
23 often happens. They have knives they guide the pulling
24 process, and they have no access to either hand wash or a
25 sterilizer. That point, in general, was a great point of
26 concern because of the lack of chain sterilization as
27 well. You can imagine that their hands were very dirty.
    28
29 The next point, there was a problem for the man who is
30 trimming. We are now moving into the fat trimming area.
    31
32 Q. Where are we, sorry?
33 A. There was a problem for him.
    34
35 MR. JUSTICE BELL: Fat trimming area, right over on the right.
    36
37 MR. RAMPTON: We have gone miles away, I see.
38 A. Yes. That man there next to the word "trimming" on top
39 of the carcass wash, the carcass wash platform is perhaps
40 this high. The man stands there and he is -- the hand wash
41 and sterilizing facility is behind him down on the ground
42 level. So the man who is on trimming platform, the
43 trimming platform is just a platform about this height. He
44 has access to that sterilizer and hand wash facility. The
45 carcass washman does not have access to it. He does not
46 use a knife but, obviously, what he would need to sterilize
47 every now and then is the hose pipe head and wash his
48 hands. He has not got access to that either.
    49
50 MS. STEEL: I missed what this hide was. It is not on the plan
    51 .....
    52
53 MR. RAMPTON: The trimming man is a step off the ground. The
54 carcass washman is more than a step off.
    55
56 MS. STEEL: I just thought it might be useful to have the actual
    57 measurements on the transcript.
    58
59 MR. JUSTICE BELL: I wanted to ask you when we got to a break:
60 What height were you signalling? Were you signalling from

                                      50
