                                                                  DAY 217

  Q. They have to negotiate the head offal rail; they then have
to squeeze between the equipment that is the other side of
       that, and all this is moving, apart from the equipment;
then they have to go in front of the transfer hoist
platform and into the door under the other chute; is that
       right?
       A. Well, the heads are not hung on the head and offal line
until after the head wash. The head is removed about where
it says "head removal", then the man carries the head to
the head wash, hangs it into the head wash on a hook there,
washes it and then puts it on the hook.

  Q. But do it this way?
       A. And, like I said earlier in the morning, the forefeet
bin is not -- during the operation the forefeet bin is not
where it is marked. It is much closer to, like, it is next
to the head removal area, between the horn cutter and the
       apron wash and sterilizer.

  Q. I was going to ask you to do that. You say, do you, that
the forefeet bin is north of the head offal rail, do you?
       A. It is north of the head, yes, during the operation.

  Q. I see, so you say it does not have to negotiate the -----
       A. He does not need to negotiate the head.

  Q. So Mr. Bone is wrong about that too, is he?
       A. Yes, at least, that was the operational situation when
       I worked there.

  Q. So park it, if you will, in your imagination to the
right-hand of the two brown men at the head removal area?
       A. Yes.

  Q. Then tell us by reference to horn cutter sterilizer, meat
inspector and head wash, the route it takes to get into the
       other chute door?
       A. Where it goes between the horn cutter sterilizer and
       the transfer hoist ---

  Q. Yes?
       A. -- where the brown man is marked, and it goes through
the area where the hind feet bin is right now, and then it
goes under the chute where the door is.

  Q. So does it cross the line twice?
       A. Yes, possibly.

  Q. They are very big, are they not, dead cows?
       A. Yes.

  Q. Moving at -- tell us what speed because you said they were
       moving, how fast, 50 ------
       A. As I told you, they jerk forwards. You have a carcass
here and when the line moves, that is the next step. It
moves quite fast, so fast that I would not want a carcass
to hit me when I walked past. That is why I was very
careful to cross the line when the line was at a
       standstill.
