There's a wonderful documentary movie made in the last 10 years that shows how cows are kept and slaughtered. It is an indie (independent filmmaker) by a woman who's fairly well known. Lots of statistics and sources
I think she was nominated or won some awards for it. That's all I know, but if you check the movie databases with this info, you may come up with something useful for you.
