You might have finished your paper long ago, but this anecdote may be of use to someone else examining the subject.

During a stay in Mexico in 1996, I ate at a McDonald's in Satelite, a suburb of Mexico City. The Big Macs were sold with a sort of jalapeno sauce instead of the typical special sauce. In this case, it would seem that the U.S. bastion of fast food is being Mexican-ized, instead of the other way around.

Little changes like that are extremely common in fast food and snack food in Mexico. "Salsa verde" Doritos seem to be more popular than the regular "nacho cheese" flavor. Other fast food places (i.e. chicken joints) also offer a spicier crust or a cabbage salad like cole slaw but not quite.
