At the store I work at we have all the time in the world :)
We also have 4 people doing close
1 on grill (Usally me :) )
1 on washup
1 on fish+chicken & fry close
1 on front closeGrill and washup get 1 hour to do close, but usally finish with in 30-40 minutes.
front and fry close get half an hour close but usally finish in about 10 minutes.
But we get heaps of time to do pre-close :)
