Mike, what do you mean by cajun McChicken? Do the McD's in Texas have those? I'm asking because whenever I go to the "finer" restaurants (the ones without drive thru's") Like T.G.I.Fridays, Friendlys, or a family run non-chain restaurant, my favorite menu item is the spicy cajun grilled chickens, and although I'm not even close to being McDonalds biggest fan, I would definately like to try one of thier cajun chickens if they were to sell them in this part of the country.
